Classic prawn & avocado cocktail

250g cooked prawns, defrosted
2 tomatoes, diced
Cocktail sauce (ready made or make your own)
Salad or salmon roe (to garnish)
For the avocado:
Dice the avocado and season with lemon juice, salt, and pepper. Add diced tomato and chopped parsley.
For the prawns:
Defrost the prawns and pat them dry. Put in a bowl and mix in a ready made cocktail sauce or make your own.
For the cocktail sauce (optional):
Combine mayonnaise, brandy, ketchup & a little Tabasco sauce depending on how spicy you like it.
On a plate, put a ring mould at the centre of the plate.
Put the avocado in first, keeping a teaspoon of it for each at the end.
Evenly place the prawn mixture on top of the avocado & gently push so it covers the whole surface.
Gentle take the ring off, then add the teaspoon of avocado on top.
Pour a bit more sauce around and garnish with a little salad or even salmon roe.
