Blackberry and Apple Crumble

Blackberry and Apple Crumble

By Simon Holst

My children have been gathering blackberries as they've walked the dogs recently - this is a great (and very popular!) way to use them, as it makes a relatively small quantity go quite a long way.

For 6-8 servings:
Cost per serving: $0.75
Time to prepare (including baking): 50-60 minutes
600g sliced apples
1/2-1 cup blackberries
1/4 cup sugar
1 Tbsp custard powder or cornflour

1 1/4 cups rolled oats
1/2 cup coconut
1/2 cup flour
1/4 tsp salt
1/4 cup canola oil
2 Tbsp golden syrup

Non-stick spray a shallow 20-23cm casserole dish. Add the sliced apples, blackberries, first measure of sugar and the custard powder (or cornflour) and stir gently to combine.

Measure the dry ingredients into a food processor or large bowl and process or mix until well combined. Add the oil and golden syrup and process or mix again until evenly combined.

Spread the topping over the fruit, then bake at 180C for 30-40 minutes or until the apples are tender and the topping golden brown.
