Episode 16 - Poke by Mary Hosking

Ingredients : Bananas, Araroot starch, coconut cream

Directions: 2 banana sccops for every 1 Aararoot starch scoop, add coconut cream and bake for 20min

 




Episode 15 - Chicken Curry by Seru Mar

Ingredients : Chicken, Basmati Rice, red onion cumber, capsicum, coriander, spices mustard seeds, cumin seeds, fenugreek ,masala,
turmeric , potatoes

Directions:

First cook rice, measure out 3 cups of basmati rice
Second make salsa - red onion cumber, capsicum, and coriander
add a bit of lime juice
1.5 kg of diced chicken thighs,
onions and all the spices, mustard seeds,
cumin seeds, fenugreek, masala, turmeric

start off peeling an onion,
peeling and chopping onions,
cut up potatoes
pour in your onions, cook that off.
add the spices, 2 teaspoons straight into that.
masala in the pot,
add the chicken
add a little bit of water, put the cover and let it cook, check it.
add a bit of salt&&stir that through again
potatoes chuck those in
leave it to cook for 20minutes




Episode 14 - Lu sipi (Taro Leaves and Lamb by Papiloa Bloomfield Foliaki)

Ingredients

Lamb (or Chicken, Pork, Fish) Taro Leaves, Kara Coconut cream, salt, Onions

Directions

Wash Taro Leaves, add small salt to all the leaves

Dice meat to medium pieces

Thinly slice onions

Place ingredients into Taro Leaves

Pour in coconut cream

Cover in oven tray with more taro leaves

Bake at 200 degrees for one hour


Episode 13 - Pineapple Pie by Robbie Kainuku

Ingredient List
" 1 cup sugar
" 1/2 cup high grade flour
" 1 teaspoon lime zest
" 1/4 teaspoon salt
" 1 cup water
" 1/3 cup Tahitian lime juice
" 1 small can (8 ounces) crushed pineapple, un-drained
" 3 eggs, separated
" 1 tablespoon butter or margarine
" 1/4 teaspoon cream of tartar or corn flour
" 1/3 cup sugar
" ? cup coconut
" Sweet pastry - bought or made


Recipe (step by step)

" In a medium saucepan, combine 1 cup sugar, flour, Tahitian lime zest and salt.
" Stir in water and lemon juice then pineapple and juice.
" Bring to a boil, stirring constantly.
" Continue cooking and stirring over medium heat until thickened.
" Beat egg yolks lightly in a small bowl; blend about 1/4 of the hot mixture.
" Return egg yolk mixture to the hot mixture in the saucepan;
" Cook 2 minutes longer, stirring constantly.
" Stir in butter.
" Pour filling into baked pie shells.
" Prepare meringue.
" Beat egg whites and cream of tartar or corn flour until frothy.
" Slowly add 1/3 cup sugar and coconut 
" Continue beating until stiff peaks form.
" Spread meringue over the hot filling, spreading to crust.
" Bake at 400? for 10 minutes, or until browned.


Episode 12 - Sapa Sui by Johnny Ginnen

Ingredients

Ginger, Onion, Garlic, Noodles, Chilli flakes, Okive Oil,thick Soy sauce

Directions

Dice onion, garlic and ginger

Chop up whole chicken

Brown onions and ginger in wok or fry pan

Add chicken to wok or fry pan

cook noodles (vermicilli)

Add soy sauce to fry pan

Add frozon veges and noodles once chicken is cooked

add Garlic and chilli last
