Ep 1 - Chive butter sauce

Chive butter sauce

4 portions

40ml white wine
2 shallots finely diced
20ml white wine vinegar
1 bay leaf
4 black peppercorns
100ml cream
40g butter diced
1 Tblsp chopped chives
1/2 lime

Place the wine, shallots, vinegar, bay leaf & peppercorns into a small saucepan. Bring to the boil and simmer gently for 3-4 mins or until reduced to approximately 5 tablespoons.

Add the cream, return to a simmer and reduce by half or until starting to thicken. Remove from heat, strain into a clean sauce pan & add lime zest, whisk in the butter. Add chopped chives and set aside.
