Allyson Gofton shares her recipe for Gourmet Garden Thai Beef Stir Fry.
1 tablespoon tamarind pulp
4 tablespoons dry sherry or water
500 grams beef for stir frying
2 tablespoons sweet soy sauce
1 red pepper, finely sliced
200 grams beans, trimmed
3-4 spring onions, trimmed and sliced
1 teaspoon GOURMET GARDEN GARLIC
2 teaspoons each GOURMET GARDEN CHILLI, LEMON GRASS, and GINGER
2 tablespoon fish sauce
2 tablespoons brown or grated palm sugar
1 tablespoon GOURMET GARDEN CORIANDER and or GOURMET GARDEN MINT
1/2 lime or lemon (optional)
1/2 cup honey roasted peanuts
Knead the tamarind in the water and, when a muddy brown consistency, strain and reserve 2 tablespoons of the liquid.
Toss the beef liberally with the soy sauce.
Heat a good dash of oil in a wok and sear the beef quickly over a moderately high heat.
Add the peppers, beans, garlic, chilli, ginger and lemon grass and toss quickly over a high heat until little char-grilled. Once the vegetables are beginning to warm add the tamarind water, fish sauce and brown or palm sugar and toss through the beef.
Season with the coriander and mint and a squeeze of lime or lemon juice and serve topped with honey roasted peanuts if wished.
