Vanilla poached apricots served with thick and creamy custard

800g fresh apricots, halved and stone removed

1/2 cup sugar

1/2 cup water

1/2 - 1 tsp vanilla paste

Method

1. Prepare the apricots.

2. Place sugar and water in a stock pot bring to a gentle simmer and stir till sugar dissolves.

3. Stir in paste and mix in and add apricots cut side down in one layer. Put lid on pot and cook very gently for five minutes. Turn off heat and leave to cool in liquid.

4. Chill till ready to serve with the thick and creamy custard*.

Thick and Creamy custard is in the dairy section of the supermarket.

We used Heilala vanilla paste.

When cooking the apricots you can use more syrup if desired - just remember equal parts sugar and water i.e. 2 cups sugar - 2 cups water

Also after cooking you can keep syrup and re-use for more fruit cooking the next day.
