1 Grapes - small clusters won't fall through the grate and get juicier and sweeter over the heat. Serve as a garnish with pork or sausages.
2. Frisee that lovely light, curly lettuce - just toss lightly in olive oil, salt and pepper and cook over a medium grill just to wilt. Add to salads for smoky flavour and textural contrast.
3. Citrus - yes you can clean the BBQ with a lemon but you can also halve and grill then cut side down and the caramelise and take on smoky notes to squeeze over your food.
4. Cheese briefly grill small wheels of soft cheese (we used Puhoi Valley Brie and Bouton d'or Brie) uncut in their rind until just melting. Serve with other cheeses and fruit as an appetizer or simple dessert course.
5. Truffled Peaches -
1 can of peaches
Splash of white truffle oil
Pinch of salt
Drain the peaches; blend with truffle oil & salt, taste. The salt makes it a savoury sauce & the truffle adds perfume.
6. Miso Mayo -
Jar of good mayo, or make the real thing
1 tsp of your favourite mustard
5 Tbsp red miso paste
Splash of soy
Salt to taste
Whisk well till smooth, taste for salt, enjoy
