Honey-scented couscous
If you've not tried couscous before, when you see how easy it is, you will be amazed why not!
Couscous is ground durum wheat semolina and used extensively in the Mediterranean and North Africa.
I thought this is a delicious morning alternative to instant porridge and an excellent choice for hiking, hunting or camping. Add all your favourite yummy dried fruit and nuts and all you need is boiling water.
400 g instant couscous
1/2 tsp ground cardamom powder
1/2 tsp ground cinnamon
100 g diced dried apricots (dates, sultanas, currants, your
choice)
3-4 tsp honey
Juice and zest from 1 orange
2 1/2 cups boiling water
Almonds finely sliced/flaked and toasted for the top
Thick Greek-style yoghurt to serve alongside
Place all dry ingredients (except almonds) in a bowl. Boil the water, add honey, orange juice and zest.
Pour over the couscous. Stir quickly to distribute spices.
Cover (plastic film ok). Leave 10-15 minutes. When ready to eat, uncover, fluff up with a fork. Sprinkle with toasted/flaked almonds and serve with dollops of greek yoghurt drizzled with warmed liquid honey.
Chef's notes: This is equally as delicious as a dessert. Grated apple or other fresh fruit in season could be added just before serving.
For a healthy start to the day, I take Pollen Granules every morning for a great immune boost. One teaspoon can be just sprinkled over the top of your breakfast will keep the spring in your step.
