Courgette Cheese Pie
Serves 6-8
This is a simple, fast recipe that enhances the courgette and makes good use of pantry staples.
With a block of tasty cheddar cheese in the fridge, some courgettes from the garden and a packet of baking mix from the supermarket - you can whip this up in seconds.
This is a family favourite for beach holidays. Courgettes travel well, you will have the block of cheese and a packet of baking mix - Alison Holst has a brand near the flour section in the supermarket - is easy to find and the results are great!
INGREDIENTS
1/2 cup grated cheddar cheese
3 cups grated courgettes
1 cup baking mix
1/2 cup oil
2 tbsp chopped parsley
4 large eggs
salt and pepper to taste
METHOD
Mix the cheese, courgettes, baking mix, oil and parsley together in
a large bowl. In a smaller bowl, beat the eggs and seasoning. Add
to the larger bowl and pour into a greased 23cm pie plate and bake
at 190degC for 40 minutes. Cut into wedges.
TIPS
- Serve this with a tossed salad and crunchy bread.
- If your family members are not keen on courgettes - they may
still enjoy this pie - one member of my family who protests at the
sight of courgettes - loves this pie. he is never too sure what
exactly is in it!
- You could add sundried tomatoes and if desired mix cheddar and
feta together. Just take care with the seasoning, if you are using
feta.
- At this time of the year you can use small florets of broccoli,
par cooked mushrooms - just make up the 3 cups but avoid
ingredients like spinach that are too watery.
