Clean out the fridge pasta
2 cups penne pasta
1 onion, finely chopped
Olive oil
2-3 cloves garlic, minced
2 rashers bacon, chopped
� capsicum, finely chopped
1 cup chopped mushrooms
2 courgettes, finely sliced
2-3 sun dried tomatoes, chopped
� pottle Voila Mushroom and tarragon sauce
A squeeze of fresh lemon
Salt and pepper if needed
Method
Cook pasta in plenty of salted water according to packet
directions.
Drain and keep a little pasta water to one side.
Cook the onion in olive oil. Once softened, but not coloured, add
garlic and vegetables. Once the vegetables have cooked through add
the Voila and then the pasta.
Add a squeeze of lemon and check seasoning. You may need to thin
the recipe with a little pasta water.
Cooks tip: You can use raw or cooked vege in this recipe and even
yesterdays cold pasta will work - its just so easy.
