Annabelle White shares a recipe for simple Italian salad.
Into a white salad bowl for each person, place freshly washed salad greens (1/2-1 cup salad greens per serve)
Top with 1/3 cup grated carrot, 1 sliced tomato, 1/3 cup cooked corn kernels, a little mozzarella cheese (optional) or you could add a little chopped feta, 1/2 can drained tuna and 1 steamed potato (cooled and chopped into chunks) and 1/2 chopped hard boiled egg.
Serve with crusty bread and olive oil and vinegar and salt and pepper.
