Annabelle White's raisin pudding

Annabelle White shares her recipe for raisin pudding - great comfort food!

Ingredients
1 cup self-raising flour
Pinch of salt
1/4 cup sugar
45g butter
1 cup raisins
1 lemon, zest
1/2 cup milk

Method
Sift the flour and salt together with sugar. Lightly rub in butter as you would when making scones, then add the raisins and the lemon zest. Add milk. Mix very lightly to form a soft dough. Spread evenly in a greased 20 cm x 20cm oven proof dish.

Sauce
2 cups boiling water
1 cup brown sugar
65g butter

Put boiling water, sugar and butter in saucepan and heat until butter melts. Spoon over contents of dish. Bake 180degC for 45-60 mins and serve while hot with cream or custard or yoghurt or ice-cream or all of them!

This recipe can easily be doubled if serving more than four people.
