Cam's Chowder Salad
* Take you favourite seafood chowder ingredients and with the
help of items from the garden make this super simple salad.
300g frozen seafood marinara mix
4 baby gourmet potatoes (steamed and cut into small dice)
1 corn kernel (cooked and shucked)
2-3 cups salad greens
1/3 cup mixed herbs
a good pinch of lemon zest
� cup good quality mayonnaise
slosh of buttermilk
2-3 tbsp finely chopped chives
salt and pepper
METHOD
Place the frozen seafood on the lamington tray.
Place in a 180degC oven for 10 minutes.
Drain the liquid away and leave the seafood to rest a few minutes
while you prepare the rest of the salad. Steam potatoes, cook
and shuck corn and wash and prepare salad greens and herbs.
Place the mayonnaise, buttermilk (just to thin the mix) and add
chopped chives and salt and pepper to season.
Toss the cooled seafood in the mayo mix, add the potato and corn
and add chopped herbs. Place on washed salad greens and serve
with crusty bread.
