Annabelle White's banana tea bread

Breakfast's cook Annabelle White joined Jack and Pippa to talk about 'lei day' in Hawaii, which takes place on the 1st of May. White showed Breakfast viewers how to whip up the perfect Hawaiian meal for the family.

This recipe comes from the Island of Maui where searching for the best banana bread is a major past time.

1 2/3 cup flour
1 tsp baking powder
1 tsp baking soda 
1/2 tsp salt
dash of cinnamon 
1/2 cup coconut (grated or shredded)
125g butter
1 cup sugar
2 large eggs
1 cup (about three bananas mashed; it is better to use over-ripe bananas) 
1/2 cup buttermilk
1 tsp lemon juice or vanilla 
1/2 cup chopped nuts (macadamia, pecan or other) 
1/2 cup raisins (soaked in Brandy or kahlua)

Method: Preheat oven to 180 deg C.

Sift first 6 ingredients in large bowl these are the "dry ingredients". Set aside.

In separate bowl, beat butter until fluffy, gradually add sugar and beat one minute. Add eggs, one at a time, beating well. Add bananas and beat ý minute more.Add lemon juice or vanilla. Mix in buttermilk and dry ingredients alternatively, starting and ending with dry ingredients. Now coat raisins and nuts with a little flour to keep them from settling to bottom of cake. Fold these floured raisins into mixture until blended.

Pour into a well greased loaf tin and bake for 60mins at 180 deg C. It may need an extra 10 mins cooking time.
