Get your day off to a high powered start with Annabelle White's delicious buttermilk pancakes
Ingredients
2 large eggs
1/4 cup vegetable oil or melted butter
1 tsp lemon rind
1 cup buttermilk
2 Tbsp brown sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
11/2 cups flour
Method
Beat the eggs and add remaining ingredients. Cover and store in fridge. Cook in a non-stick pan. Serve with NZ apple syrup or real maple syrup.
You can get fancy and add slices banana and rashers of bacon to make a pancake stack if desired.
The secret to the recipe is the lemon zest - it imparts great flavour.
