Vegetable Pulao


Vegetable Pulao (Serves 4)

Ingredients:

1 Cup Basmati Rice
A Bunch of Coriander Leaves
2 Bay Leaves
3-4 Green Chillies
3 Medium Onions, sliced finely
1/2 Onion, chopped
1 Stick of Cinnamon
1 tsp of Cumin
1 tsp Mustard Seeds
1 tsp Cardamom
1 tsp Cloves
1 & 1/2 tsp Red Chilli Powder
2 Cloves Garlic
1 inch piece Ginger
1 Cup Cauliflower Flowerets
1/2 Bag Mixed Frozen Vegetables e.g. beans, carrots, green peas
1 & 1/2 tsp Oil

Cooking Instructions:

Cook the rice according to the packet directions.
In a non-stick pan add the oil.
Once the oil is heated, add cumin and mustard seeds (they should splutter).
Add the onions to the cumin and mustard seeds along with the bay leaves, cloves, cinnamon and cardamom.
Once the onions are browned, add the red chilli powder and cook 30-45 seconds.
Add the vegetables including the cauliflower and sprinkle some water into the pan.
Keep covered and cook on a low heat till the vegetables are cooked.
This will take approximately 15-20 minutes.  Add extra water if necessary.
When the vegetables are done, transfer them to a large frying pan; add all the boiled rice, season with pepper, and the blended masala (made up of Turner powder, curry powder and cumin). Mix thoroughly and then heat over a low heat on the cooking range.

Serve with Raita.
