Thai Stir Fried Chilli Rice Noodles

Ingredients:

200g Minced chicken
Small packet rice noodles (about 300g)
3 Red chillies, shredded
1/4 Onion, shredded
1 Tomato, sliced
1 Bunch fresh basil leaves
1 Tbsp preserved cabbage
1 tsp Crushed garlic

Marinade:

1 tsp Soy sauce
1 tsp Oil
1 tsp Cornstarch
1/2 tsp Water

Seasonings:

1/2 tsp Fish sauce
1/2 tsp Soy sauce
1 tsp Sugar
1 tsp Chicken powder
1 tsp Vinegar

Cooking Instructions:

Marinate the minced pork with soy sauce, oil, cornstarch and water.
Heat oil in wok, sauté the preserved cabbage, garlic and red chilli until aromatic.
Add the marinated pork and stir-fry well. Stir in the sliced onion and tomato and continue to stir for a while.

Add the rice noodles and seasonings (including fish sauce, soy sauce, sugar, chicken powder and vinegar) and basil leaves. Stir well over high heat.
Serve immediately.
