Spring Salad with Squid and Apple
Ingredients:
Squid
Oil, for pan frying
Cracked Pepper
1 Large Green Apple
1 tsp Lemon Zest
1 tsp Fine Cut Dill
1 Cup Fresh Salad Leaves
Dressing:
Lime Juice
Olive Oil
Chilli
Sugar
Cooking Instructions:
Pan fry the squid in a little oil and cracked pepper and set
aside.
Thinly slice a large green apple into matchsticks, and mix with the
squid.
Add 1 teaspoon of lemon zest, 1 teaspoon of fine cut dill and a
good cup of fresh salad leaves including rocket, New Zealand
spinach and choy sum flowers if you have any!
Mix thoroughly.
Finally drizzle over the dressing and serve.
