Red Duck Curry

Ingredients:

1 roast duck, de-boned, sliced
3 cans coconut milk
15 cherry tomatoes
5 fresh red chillies, sliced lengthwise
3 kafir lime leaves, chopped
2 tbsp fish sauce
1tsp salt
3 tbsp sugar
1 cup fresh basil

Curry paste
7 dry red chillies
3 tbsp chopped garlic
¼ cup lemon grass, sliced
¼ cup galangal, chopped
1 tsp kaffir leaf, chopped 1tsp coriander root, chopped
1 tbsp shrimp paste
1 tsp white peppercorns
½ tsp coriander seed

Cooking method:
Put all ingredients of curry paste in mortar and pestle, pound them into fine paste
Heat 2 cups coconut milk in wok, add the curry paste and cook for 5 minutes
Add the rest of the coconut milk, boil, add the sliced roast duck, cherry tomatoes and red chilli, boil
Add the rest of the ingredients; kafir lime leaves, fish sauce, salt, sugar, fresh basil,
and boil for a further 5 minutes
Serve with steamed rice
