Purple Shrimp Rice
1 Onion, finely chopped into small pieces
1 Green Capsicum, sliced then cut into smaller pieces
300 grams of Shrimps
2 Tomatoes, chopped into small pieces
30 grams of Almond Flakes
200 grams mixture of purple, brown and white rice
A. Soak purple and brown rice in water for a day
B. Mix white rice with A. Add water and cook in rice cooker.
Purple shrimp rice:
Heat wok with oil.
Add onion pieces, stir.
Add tomatoes, stir.
Add shrimps, stir.
Put a bit of salt into wok, fry the mixture.
Put cooked rice into wok, stir.
Add a touch of sesame oil, oyster sauce, stir.
Serve on plate, squeeze a bit of lemon zest on rice.
Sprinkle chopped coriander and almond flakes over fried rice.
