Kiwi Burger
Peter Chaplin's Kiwi Burger
Ingredients:
1 large Kumara
1 Block Firm Tofu
Soy Sauce
Oil for pan
1 tsp Ginger, grated
Fresh Ciabatta
Iceberg Lettuce Leaves
Tomato, sliced
Fresh Beetroot, grated
Cooking Instructions:
Boil a large Kumara whole with skin on until cooked. Set
aside to cool.
Fry off thick slice of firm tofu and set aside to marinate in soy
sauce.
Slice Kumara to same thickness of Tofu. Place kumara slice
and tofu slice in pan with oil, and marinade juices.
Grate in about a teaspoon of ginger (and the juice) and then cook
until golden.
Build burger - Peter uses a slice of fresh ciabatta. Place
an iceberg lettuce leaf onto the bread curving up like a bowl and
into this place the Tofu slice then the Kumara slice, and
then add sliced tomato and grated fresh beetroot and the top of the
ciabatta.
It's a good idea to secure with a skewer until you're ready to eat
it.
