Fresh Snapper Curry


Fresh Snapper Curry

Ingredients:

1/2 tsp Mustard
1/2 tsp Cumin Seeds
10 Curry Leaves
1/2 tsp Fenugreek Seeds
1 Onion, finely sliced
6-8 Cloves of Garlic crushed
1/2 tsp Ground Turmeric
1 tsp Ground Cumin
2 tsp Ground Coriander
1 tsp Salt
6 Green Chillies, finely sliced
3-4 Ripe Tomatoes, chopped
1 Cup Hot Water
2 Tbsp Chopped Fresh Coriander Leaves
1.2 Kg Fresh Snapper scaled and cleaned and cut into steaks

Cooking Instructions:

Heat two tablespoons of oil in a pan and add the mustard seeds and cumin seeds.

When the spluttering and popping of the seeds subsides add the curry leaves and the fenugreek seeds. When the fenugreek seeds changes colour to a darker shade (don't let it burn) add the onions and stir thoroughly. Cook the onions until they brown, stirring frequently. Add the garlic, turmeric, ground cumin, ground coriander, salt and chillies and stir thoroughly. Cook for a couple of minutes, stirring frequently. Add the tomatoes and hot water. When it comes to a boil, lower the heat and let it simmer for about five minutes. Place the fish steaks gently around the pan. When it comes to a boil again cover and cook for a couple of minutes. Turn the fish over and cook again for a couple of minutes. Do not overcook the fish. Garnish with the fresh coriander leaves.
