Fresh Kimchi


Su-Ah's Fresh Kimchi

Ingredients:

Cabbage Leaves
Salt
1/2 White Onion
Spring Onions
Asian Chives
1 tsp Ginger, grated
1 tsp Garlic, crushed
1 Tbsp Fish Sauce
1 Dessert Spoon Ground Chilli
1 Tbsp Sugar

Cooking Instructions:

Cut cabbage leaves in half and then cut the thick white stalks in half again. 
Dampen the cut cabbage with a little water and then sprinkle with salt and leave to marinate for at least 30 minutes. 
Wash and drain the cabbage. 
Add one half a white onion chopped long and finely, long chopped spring onions and asian chives (which are flatter in appearance than english chives).

Add 1 teaspoon of grated ginger, one teaspoon of crushed garlic, a tablespoon of fish sauce and dessertspoon of ground chilli and a tablespoon of sugar.

Massage all the ingredients through thoroughly and serve.
