Curried Lamb Shanks


Ingredients:
 
4 Lamb Shanks
5 Cardamoms
5 Cloves
2 Small Pieces Cinnamon Sticks
1 Onion, finely sliced
10 Curry Leaves
6-8 Cloves of Garlic Crushed
1 Tbsp Grated Ginger
1 tsp Turmeric
1 tsp Garam Masala
1/2 tsp Chilli Powder
5-6 Green Chillies, finely sliced
1 tsp Salt
3-4 Ripe Tomatoes, chopped
2 Tbsp Chopped Fresh Coriander Leaves

Cooking Instructions:
 
Heat two tablespoons of oil in a pan and add the cardamoms, cloves and cinnamon sticks. When smoky add the onions. Cook until brown, stirring frequently. Add the curry leaves, garlic, ginger, fresh chillies, turmeric, garam masala and chilli powder and stir thoroughly. Cook stirring constantly for about two minutes. Place the lamb shanks in the pot gently and add the salt. Stir, making sure that the meat is well coated with the spice mixture. Cook for about five minutes, stirring frequently. This ensures that you seal in all the juices. Add enough hot water to cover the lamb shanks and the tomatoes and stir gently. When it comes to a boil, lower the heat and cover. Cook for about an hour or until the meat is tender, stirring occasionally. Garnish with the fresh coriander leaves.
