Chicken with Ground Cashew Nuts

Chicken with Ground Cashew Nuts Ingredients:

1 Whole Chicken (1.2kilo), skinned and excess fat removed and cut into small pieces.
1 Large Onion, finely sliced
6 Cloves of Garlic, crushed
1 Tbsp Grated Ginger
2 tsp Curry Power
1/2 tsp Turmeric
1 & 1/2 tsp Chilli Powder
1 & 1/2 tsp Salt
3 Ripe Tomatoes, chopped
3 Tbsp Fresh Coriander Leaves
1 & 1/2 tsp Garam Masala
1/2 Cup Yoghurt
130g Raw Cashew Nuts, finely ground
Cooking Instructions:
Heat two tablespoons of oil in a pan and add the onions, garlic and ginger and stir. Cook until the onions turn brown, stirring frequently.
Add the curry powder, turmeric and chilli powder and stir for a minute.

Then add the tomatoes, salt and 1/2 the fresh coriander leaves and stir thoroughly. Cook for five minutes stirring frequently.
Add the chicken and stir until the chicken is well coated.

Cover, lower the heat and cook until the chicken is almost tender, stirring occasionally. Add the yoghurt and garam masala and stir.
Cook uncovered for about five minutes, stirring frequently.

Add the ground cashew nuts, stir thoroughly and heat through.
Garnish with the remaining coriander leaves.
