Bo'Kho Pie (Vietnamese Beef Stew in Pie)


BO'KHO PIE (Vietnamese Beef Stew in Pie)

Ingredients:

5 Tbsp Bo'Kho Powder
1 Kg Beef, diced finely
3 Carrots, diced finely
1 Radish, diced finely
2 Onions, chopped finely
4 Cloves Garlic, chopped finely
10 Pieces Star Anise
2 Stalks Lemon Grass, ground finely
Dark Soy Sauce
Chinese Cooking Wine
Cooking Oil
Salt
Sugar
Tomato Paste
Water
Flour, mixed with enough water
Coriander Leaves
Cooked Rice Noodles
Ready Made Pie Crusts

Cooking Instructions:

Marinade beef with bo kho powder, cooking oil and ground lemon grass for half an hour.
While the beef is marinating, fry star anise until it turns black, and remove it from the oil.
Add chopped onion and garlic into the oil followed by the marinated beef.
Add Chinese cooking wine and dark soy sauce into the wok.
Stir until it's cooked.
Pour the contents into a deep sauce pan, add water, and bring to the boil.
Fry chopped carrots and radishes and mix them together with the beef, stirring frequently. Once it boils, add sugar, salt, tomato paste, and thicken with flour. 
At this stage, this beef stew can be poured on the cooked rice noodles. Garnish with coriander leaves and serve.  
To use the stew for pie's fillings, it needs to be thickened even more, then, added into the ready made pie crusts. Bake until done.  With one recipe you can make two different dishes; Bo Kho noodles (which can be found in Vietnamese restaurants) and Bo Kho pie.
