(Fried transparent noodles with minced pork)


500g minced pork
2 tbsp soy sauce
1 tbsp sugar
1tsp conflour (cornstarch)
1/2 tsp chilli paste
1 small red chilli
4 spring onions chopped
100g transparent noodles
3 tbsp oil
2/3 cup stock or water

Mix minced pork with the soy sauce, sugar, conflour and chilli paste. Soak the noodles in warm water for 10 minutes. Heat up the oil; then fry the chilli and spring onions, then the pork.

When the colour of the meat starts to change, drain the noodles and add them to the pan. Blend well, then add the stock or water; continue cooking. When all the liquid is absorbed, it's ready.
