2009 Week 9: Kebabs
Kebabs
Ingredients:

450gm lean lamb pieces (1 slice thick-cut rump
steak)
1 red pepper
8 button mushrooms
3 small courgettes,
1 small red onion
Marinade:
2 Tbsp soy sauce,
Juice 1 ripe lemon
2 Tbsp Liquid honey
2Tbsp grated fresh ginger / 2 tsp ground ginger
1/2 tsp garlic
Freshly ground black pepper or chilli
Instructions:
Mix together a marinade of soy sauce, lemon juice, honey,
ginger, garlic and pepper. Chop lamb into bite-size cubes and allow
to marinate in the sauce for at least 5 minutes.
Chop peppers, mushrooms, onion and courgettes into chunks. Thread the ingredients onto (pre-soaked) wooden skewers, alternating cubes of lamb with chunks of vegetable.
Place under a medium grill turning several times until meat is cooked to preference (about 8-10 minutes). Serve with a side dish of your choice.
You may wish to use lean mince instead of chunks of meat to
create Kofta.
