2009 Week 5: Jambalaya
Jambalaya
Ingredients:
2 Tbsp oil
1 tsp garlic
1 onion, diced
2 stalks celery, diced
1 red / green pepper, diced
400gm diced chicken OR beef/pork
1 diced low-fat chorizo / spicy sausage / smoked ham
400gm tin Cajun or Mexican flavour chopped tomatoes
1 tsp Cajun seasoning
1 cup uncooked basmati rice
2 cups chicken stock
1 Tbsp fresh parsley
Instructions:
Fry onion, garlic, celery, pepper and seasoning in an oiled frying pan for 3-4 minutes or until softened and set aside.
Quickly fry chicken pieces and sausage in vegetable pan until brown all over.
Combine vegetables and meat in large lidded saucepan & add tomatoes, rice and stock. Stir thoroughly, cover and simmer gently for 15 minutes until rice absorbs most of the liquid.
Remove from heat and let stand with lid on for 5 minutes. Sprinkle with chopped parsley.
Serve with a side dish of your choice.
