2009 Week 11: Pizza
Pizza
Ingredients:
2 cups plain flour
2 tsp dry yeast
1 tsp salt
1 tsp sugar
3/4 cup warm water
100gm tomato paste (no added salt)
100gm cheese, grated
1 small capsicum
1 medium onion, finely sliced and blanched in boiling water
2 large field / 6-8 button mushrooms
2 medium tomatoes, finely sliced
220gm tin crushed pineapple (liquid squeezed out)
Italian / mixed herbs
Seasoning
Optional: Lean ham, diced
Instructions:
Base - Preheat oven to 230degC
Soak yeast in the warm water for 5 minutes. Place flour, salt & sugar in a bowl and blend in yeast and water mixture. Knead for several minutes until you have one smooth ball of dough. Add a sprinkle of flour if it remains too sticky.
Cover the bowl of dough with a clean tea-towel and place in a warm place (e.g. on top of the oven, in an airing cupboard) to rise for 15 minutes.
Divide dough into 2 equal sections and roll or stretch to form thin base shape (about 25cm across). Place on baking tray.
Topping - Spread base with generous layer of tomato paste. Add all the toppings to the base - grated cheese first. Sprinkle with herbs and seasoning.
Bake for 10-15 minutes or until cheese is bubbling and starting to brown.
Serve with side dish of your choice.
